I have to say that this is a fantastic cookbook for someone with gluten sensitivities or allergies. I&#039;m absolutely thrilled with the fact that I don&#039;t have to give up bread!

&lt;br /&gt;I know that millions of other people suffer from food allergies and intolerances, particularly sensitivity to wheat, rye, barley and oats, but was not alone in thinking I had to give up a lot of things I loved - such as homemade bread.
&lt;br /&gt;
&lt;br /&gt;Well, this incredible book gives me recipes that everyone will want to eat, allergies, intolerances, or not.
&lt;br /&gt;
&lt;br /&gt;The authors are gluten-free baking experts and have terrific ideas about how to take advantage of the bread machine&#039;s ability to create dough for all kinds of incredible goodies such as bread rolls, pizza crusts, sour doughs and delicious desserts.
&lt;br /&gt;
&lt;br /&gt;You can even make wraps and flatbreads such as ciabatta, focaccia, lavosh, and crackers - and all of these wonderful recipes are gluten-free. I&#039;m a happy (homemade) bread eating person once again! Love this book!

I own a 1-lb. loaf Zojirushi mini-loaf bread machine. Love that thing, but I digress. I also bought 100 lbs. of whole wheat grain and grind it into flour as needed in a Vita-Mix blender using the dry container. This cookbook for the bread machine contains critically important information that is geared towards someone like myself, though not exclusively. I haven&#039;t made a bad loaf yet, thanks to what I&#039;ve learned in this book. This book is everything it&#039;s said to be. Though this book isn&#039;t very big, every recipe is for a truly nourishing loaf of bread. Many will turn out a little more dense than what you&#039;d buy, but at least not a brick, lol. There are tricks and tips which make bread-machine baking with whole grain flour accessible and easy. You CAN make whole-grain bread in a bread machine with the information contained in this book. I bought it used for a fairly pretty penny, but the information is well worth it.

When we got started with gluten-free bread making, we bought three books and a Zojirushi BBCCX20 Home Bakery Supreme Bread Machine. The first recipe we tried was from the bread maker manual, which turned out heavy and relatively tasteless. Our second recipe was the breadsticks from this book (page 146). We made them exactly as the recipe described, and scored a delicious success.
&lt;br /&gt;
&lt;br /&gt;The best part of this book is its completeness. Each recipe includes full ingredients and instructions, like most books. But it also includes specific instructions on measuring the temperature, customizing machine cycles, etc. We learned a lot by making recipes from this book before trying recipes from our other two books. 
&lt;br /&gt;
&lt;br /&gt;To be successful with gluten-free bread making, you need the right machine. Pages 15-19 of this book give specific recommendations on how to choose the right one. If you want my one sentence answer, buy the Zojirushi, which meets all of the requirements described there. You need a machine that can handle gluten-free dough, which is often thicker and heavier than wheat dough. The Zojirushi has two paddles in a horizontal baking tray, instead of one paddle in a vertical tray like many smaller machines. It is also programmable, which helps a lot. More tips: 
&lt;br /&gt;
&lt;br /&gt;* Make each recipe EXACTLY as recommended the first time. That will allow you to compare any changes you make with the results obtained by the authors. 
&lt;br /&gt;
&lt;br /&gt;* Measure ingredients exactly, particularly flours. Don&#039;t pack the flour into the measuring cup, just scoop into the measuring cup and scrape off the excess. If you tap or otherwise pack the flour into the cup, you&#039;ll end up with too much of that flour, by perhaps 20% or more. 
&lt;br /&gt;
&lt;br /&gt;* Measure temperature after baking cycles, as often recommended in this book. 
&lt;br /&gt;
&lt;br /&gt;* If you have hard water (ours is very hard) use bottled spring water for baking. This can make a surprising difference.

I have a brand new (this is 2010, mind you) Zojirushi Mini Home Bakery (1 lb. loaf bread machine), and I was advised to purchase this book, since it gives 1 lb. loaf versions of all its recipes, in a review for that machine.  At first I was concerned about the oddly higher (by 1/2 tsp.) amount of yeast called for in all these recipes, along with most all older bread machine recipes, than in the wonderful recipes in the Zojirushi manual that came with my machine, but there&#039;s no reason to worry.  I tried one to the letter (the cheese and jalapeno bread) last night, and it came out fabulous - possibly one of the best loaves I&#039;ve ever made.  I&#039;m excited to try the other recipes, and, based on some of the other reviews for this book, I&#039;m expecting them to be similarly excellent.  I have a feeling I won&#039;t be disappointed!

I think I must have every single book by Donna Washburn and Heather Butt. They are brilliant at what they do, and I never have any trouble following their recipes. My breads always turn out great (they tell you to watch your ingredients carefully as even a tiny bit more than you should have can make a recipe fail).

&lt;br /&gt;The best part of the book (well, besides the amazing bread recipes!) are the recipes for pasta cake and cookies! Who could ask for more?

When I first found out that I had a gluten-intolerance, I most missed homemade bread, my favorite food. I just got my first bread machine, and have tried two recipes from this book within the last two days. They were both amazing! The texture is perfect and the taste makes me glad to be gluten-free. I have been a bread baker for over 35 years, so that is not a statement I make lightly. I plan to write to the authors and thank them for enriching my life by providing such a fool-proof method along with creative and delicious recipes.

I had purchased a bread machine two years ago and with my hectic schedule, I never had the opportunity to even take the Zojirushi Home Bakery Supreme out of the box. Sad, but true. Finally, I wanted to buy cookbooks to show me how to use my machine and to produce bread and not a brick (part of my fear and the reason I never took the machine out of the box). Being new to bread making, I wanted to start off with a method that seemed a little easier to me, with a machine. This cookbook has helped to give me guidelines for recipes, ideas for trying flavors I may not have considered, and a look into sour dough. I like the dark black type on the white pages, easy to see. This has been a good starter book for me as the recipes haven&#039;t seemed too difficult. The recipes I have tried have not come out &quot;too wet&quot; like another reviewer suggest. I can honestly say I would rather have too wet than too dry. It&#039;s easier for me to sprinkle in more bread flour during the first five minutes of kneading than it is to keep adding water until the dough is moist enough. One must realize that water is not necessarily the only &quot;wet&quot; ingredient utilized in a recipe. Adding more water to a dry dough could potentially make a dense or flavorless loaf, in my opinion. Humidity also could affect wetness or dryness of a loaf, not necessarily the original recipe. When I purchased this book a few years ago, I had no knowledge of bread machine baking. The most important item in the book for me was on page 6 showing  photos of three different bread doughs after their first 3 to 5 minutes of kneading.. The first showed a photo of what the correct consistency of the dough should look like(a smooth ball.) The second showed what the dough looks like if at an incorrect consistency(dry &amp; crumbly)and how to correct this. The third photo showed a dough that is incorrect as it does not form a ball and advises how to fix it. All the corrections that are needed are made by opening the cover of your machine during the first 3 to 5 minutes of kneading. There are just too many variables that come into play with flour, humidity for example, that may alter the behavior of a recipe from one day to the next. By following those three photos along with their recomendations I have enjoyed all the recipes I&#039;ve tried.  This is a reliable and honest book. Honest, because it delivers! P.S. it urges you to follow the order of your breadmaking machine instructions when adding ingredients.

There is not better smell in a house on a cold winter&#039;s day than baking bread. Nothing better to serve with a meal than hot, fresh baked bread. We back a lot of bread at our house during the colder months and I&#039;ve been going back to this very good bread book for over five years now and I&#039;m sure I&#039;ll be using it for five more.

OK, I&#039;ve only tried the Bread Sticks recipe that is listed above and they were fabulous!  Instead of the rice flour I substituted Bob&#039;s Red Mill all-purpose flour.  I&#039;d advise doubling the recipe and baking in a glass pan.

<p>OK, I&#8217;ve only tried the Bread Sticks recipe that is listed above and they were fabulous!  Instead of the rice flour I substituted Bob&#8217;s Red Mill all-purpose flour.  I&#8217;d advise doubling the recipe and baking in a glass pan. </p>

I have had this book for several years and just love its recipes. I just recently ordered this book to give to my sister because she was frequently asking me for some of my bread recipes so I figured she would enjoy having her own copy of this great book. All the recipes use regular ingredients and are very easy to make and very flavorful.
&lt;br /&gt;Hint:::I use my bread machine to do the mixing and kneading of the dough by using the dough/pasta cycle. I then remove the dough and form it into the size and shape of loaf or rolls I want. Loaves bake at 350 to 375 degrees for 25 to 30 minutes. Rolls bake at 375 degrees for 15 to 20 minutes. Works great every time. I don&#039;t every buy bread any more. I make all our breads and feel we are eating much healthier because there are no chemicals or preservatives added to the bread we eat.

I love this book. It has a great trouble shooting section as well as delicious recipes! Since I started using this book I have totally bonded with my bread maker. The recipes that came with my Wolfgang Puck bread maker were hit and miss. Now it&#039;s a hit every time! I also have added my own never fail tip to each loaf that I have gleaned from the internet. The one commandment I have is always sift the flour!!! I also let it knead for approximately 2 minutes before adding the yeast. I have never had a failure since I started doing this. This book has also given me the courage to experiment with my own recipes, with great success. I will be buying more bread books from this author. She knows her stuff!!

Baking bread requires that you are specific, that you follow directions, unless you are a pastry chef you should not vary and should not try to tweak things, and most importantly it requires patience and practice.  Can&#039;t wait to try the others!

A great addition to the gluten free baking kitchen!  The bread is excellent.  Looks good, is light and tastes great.  Using the basic sandwich bread receipe, I can have sandwiches again.  Really the best gluten free machine made bread I have tasted!

I was so happy when I found this book on Amazon. We have moved several times and lived overseas for several years and this book was a staple in my everyday life while there. <p>This book is a must for diabetics. There are a ton of recipes to choose from and the book is spiral bound which makes for easy page turning.</p>

This is one of the best basic books about baking. I&#039;m a 42-y-o men with no experience in baking. This book guided me in the process of managing new kinds of flours -not too many though- basically sorghum flour, tapioca flour, and starches plus other condiments all easily available in iherb.com, vitacost.com, as well as in amazon.com. I&#039;m trying every recipe from top to bottom and all of the loaves have come out just perfect. It&#039;s a very tiny book, but by now it&#039;s enough for what I have to learn. Thank you

Bought this book knowing she&#039;d used a Zojirushi and I have a Breadman.  Breadman&#039;s are fairly well known for &quot;aggressive&quot; mixing and bakes at a much higher temperature, but even with my 10 year old model, I have one customizable program.  Because GF flours are very delicate, you just can&#039;t mix them for very long -- I&#039;ve seen a number of producer recommendations to not mix for more than 4 minutes, nor let rise over about an hour.  With that in mind, I didn&#039;t even bother utilizing Annalise&#039;s settings - I considerably shortened the mixing and baking times for my Breadman and increased the rise time by about 10 minutes.  Perfection.  That being said, the recipies in the book (yes, there aren&#039;t many) can really be used as MASTER recipes to convert traditional wheat recipies to GF.  For me it was getting the liquid to dry proportions right, as well as the amount of xanthan gum.  This book does that very well and the result is a decent size loaf without the gummy, dense texture of many other GF recipies that tastes great and works as both a sandwich bread, or toasts up for breakfast.  Just what I was looking for.
